Phoenix Pizza Maker Chris Bianco Stars in ‘Chef’sTable’ on Netflix in September

Chris Blanco, the pizza maker extraordinaire who put Phoenix on the wood-fired pies map, will soon be featured on Netflix Chef’s table: Pizzas.

The James Beard Award winner will be the focus of this season’s first of six episodes of Chef’s tablea documentary-like series devoting an entire show to each chef.

In a trailer for the Emmy-nominated series, which premieres on Netflix September 7, a first shot of pizza boxes passes the chef in his kitchen Pizzeria Bianco Town & Country on 20th Street and Camelback Road. Another photo shows Bianco putting the finishing touches on some dough, then sliding one of his legendary pies into a wood-burning brown-brick oven at the original Heritage Square restaurant in downtown Phoenix, which opened in 1996.

“You’re going to see pizza differently after spending time with Chris Bianco. Chris is the Coltrane of pizza; this guy redid the game,” says the narrator.

The show, which began in 2015, showcased a variety of culinary artisans from around the world, from pastry chefs from Manhattan and Sicily to fashion-forward women who are shaking up expectations in a male-dominated industry. Chef’s table also dedicated entire seasons to French cuisine and barbecue.

This season dominated by pizza follows a similar format, featuring inspiring and fearless chefs from Italy, Japan, Minneapolis and, of course, Phoenix.

Bianco first put Phoenix on the pizza map in 1988, baking pies from a small corner of Euro Market, now an AJ’s Fine Foods inside Uptown Plaza at Central Avenue and Camelback Road. But the poetic chef’s empire, like his dough, has grown from his humble beginnings.

The casual Pane Bianco restaurant offers focaccia sandwiches, slices of pizza and salads, while Tratto offers homemade pasta and antipasti with 24-month-aged prosciutto di Parma.

The chef won the James Beard award for Best Restaurateur in June, his second of what many consider the “Oscars of Food” since winning the Southwest’s Best Chef award in 2003.

Downtown Los Angeles’ Pizzeria Bianco debuted just days after winning the award in June, with New York-style slices and 18-inch pies to satiate West Coast appetites. The Los Angeles restaurant now also serves dinner, with small plates, salads, pizzas and an assortment of homemade sorbets.

An August 31 Instagram post from the Pizzeria Bianco Los Angeles account excitedly announced the upcoming show and shared the Chef’s Table: Pizza trailer that depicts Bianco and his passion.

“September 7!” the post reads. “You may have heard that something delicious is coming.”
